Free Recipe for Roasted Red Onion with Thyme and Butter

Ingredients:
6 more or less equal size red onions (medium or large), fresh thyme, butter, salt.
Mode of preparation:
Take the onions, remove the first layer of skin. Cut off the bottoms with a knife, but just enough to get a flat base. Make 2 cuts in a cross-shape in the top, cutting the onions half way down (but, mind you, do not cut them right through into quarters!). Take some fresh thyme, chop it, mix it with some soft butter and a considerable amount of salt. Take this mixture and push it into the gaps made in the onion tops – put about a knob of this thyme butter into each gap. Place the onions on a tray or earthenware dish sprinkled with salt. Put the tray into an oven at 200 degrees C for 30-35 minutes (depending on the size of the onions). It is actually possible to prepare a slightly different version of the dish using other herbs like basil or oregano as long as they are fresh! The onions go great with roasted chicken or duck.

Ingredients:
softened unsalted butter, 1 cup of vegetable oil, 1 cup of sugar, 2 tablespoons of ground ginger and 1 tablespoon of cinnamon, ¼ teaspoon of ground cloves, a tablespoon of honey, 2 large eggs, 3 cups of plain flour, 1 teaspoon of salt, 1 cup of water, 1 tablespoon baking soda.
Mode of preparation:
In a large bowl, whisk together the vegetable oil and sugar, adding the eggs and whisking until smooth and a bit foamy. In another large bowl, whisk together the flour, ground ginger, cinnamon, salt, and cloves. Whisk the moist mixture into the flour mixture until evenly combined. Add honey. In a small saucepan, bring the water to a boil. Remove from the heat and stir in the baking soda. Add the this to the dough and mix well. Place the dough in a lightly buttered cake pan and that has been lined with a piece wax paper. Now place the pan in a preheated oven (up to 180 degrees C). Bake for about 45 minutes. The cake is great served warm with ice-cream or whipped cream or cold with a cup of hot chocolate.
