Peach Cake Recipe

1 cup of plain flour, ½ teaspoon of baking powder, ½ cup of caster sugar, 100g of butter, 2 tablespoons of dry white wine, ½ tablespoon or grated lemon rind, a pinch of salt, 1 kg of peaches, 2 egg yolks, 1 cup of thick cream, 2-3 tablespoons of almond flakes.
Mode of preparation:
sift the flour and mix it well with baking powder and sugar, adding the lemon zest as well. Cut in the butter with a knife. Add some salt and the wine and knead the dough thoroughly. Wrap it in cling film and put in a fridge for some time. Take the peaches and put them into boiling water for just 1-2 minutes. Rinse them under cold water, then peel and cut into halves to remove the stones. Take the dough out of the fridge, roll it out and line a round baking tin with it. Prick it with a fork all over. Arrange the peach halves (the round side up) on top of the dough and bake in a preheated oven at 200 degrees C for about 15 minutes. Whisk the cream with egg yolks until a bit foamy and pour the mixture over the peaches, sprinkle with almond flakes and return to the over for another 20 minutes.

Good Old Baba Cake Recipe

500g of flour, 40g of yeast, 80g of butter, 80g of sugar, 4 egg yolks, 10g of almonds, 1 cup of milk, 1 teaspoon of salt, grated ring of 1 lemon.
Mode of preparation:
Take a bowl and put yeast into it adding a teaspoon of sugar, ½ cup of flour and lukewarm milk. Mix this and leave it in a warm place until the mixture has foamed. Put the egg yolks into a stoneware bowl and place the stoneware bowl on top of a pan of simmering water. Add sugar and lemon zest and whisk thoroughly. When the egg yolks have turned white, add the skinned and chopped almonds and the salt. Pour in the yeast mixture, add the remaining flour and knead for 60 minutes. Add the warm clarified butter and work it in until the dough is shiny and elastic. Fill a greased mould to mid height with the dough (keep in mind that this dough will grow), cover with a cloth and leave to rise in a warm place. Then take the cloth off and place the mould in a preheated oven for 60 minutes. The cake tastes great when served warm and with butter on the side. One of the typical variations is to add raisins instead of almonds or other nuts.
