Strawberry Knedle with Breadcrumbs Recipe

Ingredients (for 4 persons):
500g of light curd cheese, 200g of butter, 4 tablespoons of sugar, 2 egg yolks, 250g of strawberries, juice and grated rind of ½ lemon, 8 tablespoons of wheat flour and 8 tablespoons of semolina, pinch of salt, breadcrumbs.
Mode of preparation:
Take the curd cheese and put it through a mincer. In a deep bowl beat 100g of butter with 2 tablespoons of sugar and egg yolks until the mixture is foamy. Whisking all the time, gradually add the cheese, lemon juice and lemon zest, flour and semolina and the salt. Work it all into a smooth mixture, then let it rest for about 30 minutes. With hands dusted with flour take pieces of the dough, flatten each, put a strawberry in the middle and seal carefully. Drop the knedle into boiling salted water and cook for 15 minutes. Before serving, pour over with melted butter with browned breadcrumbs and sprinkle with some sugar.

Recipe for Potato Salad with Peppers and herbs

Ingredients (for 4 persons):
4-5 potatoes cooked in jackets, 2 beef tomatoes, 1 green pepper, 1 yellow pepper, 1 tablespoon of chopped, 2 tablespoons of chopped parsley, dill and chives, 1 tablespoon of chopped sage and mint leaves, salt, pepper, 1 cup of yogurt, 1-2 tablespoons of thick mayonnaise, 1 tablespoon of lemon juice.
Mode of preparation:
in a small bowl mix the mayonnaise with the yogurt adding salt, pepper, sage and mint. Leave it in a fridge to chill while preparing the rest. Take the tomatoes and blanch and skin them, then cut them into cubes. Take both the green and yellow peppers. Core them, rinse and dry them, cut them into strips. Cut the peeled potatoes into cubes, sprinkle them with lemon juice and a bit of pepper and salt. Combine them with the tomatoes, peppers and the chopped herbs. Now take the previously prepared dressing and pour it over the vegetables. Toss gently and refrigerate for 30 minutes. Great as a side dish for any grill party.
