A Cucumber and Yogurt Refreshing Drink Recipe

This is a healthy recipe for a refreshing drink that can serve as a midday snack or even lunch if served with a small sandwich or toast. It is especially recommendable for hot summer days, but can be prepare all year round.

1 medium-sized cucumber, 500ml of drinkable yogurt, 4 radishes, a pinch of salt.
Mode of preparation:
take the cucumber and wash it thoroughly. Peel just a part of the cucumber and leave the peeled off skin aside. There is no need to peel the whole thing, the drink is actually better with an unpeeled cucumber. Cut the cucumber into chunks and place them in a blender or mixer. Add salt. Take the radishes, wash them, cut them into halves and add to the cucumber. Now pour the yogurt over the whole thing and blend. Keep blending until the mixture is uniform and a bit foamy. Pour the drink into long, thin glasses, decorate with the peeled off cucumber skin you have put aside. Serve chilled and with a straw. It is possible to used chopped ginger instead of the radishes.

Radish and Fennel Healthy Salad Recipe

radish, fennel (advisable quantities are 2 parts of fennel per 1 part of radish), salt, pepper, olive oil, lemon juice.
Mode of preparation:
take nice, firm radishes, wash them and cut into thin slices. Take the fennels and wash them. Make sure you buy the rounder, fatter type of fennel. Cut the green tops off, but do not throw them away , just put them aside. Now take the bulb and peel off the outside leaves if they seem to be a bit tough. Cut the bulb in half and slice very very thinly. Put both of the sliced vegetables in a bowl and cover with cold water, adding some extra ice. Leave it this way for at least 15 minutes so that the radishes and fennels are really, really crispy. Meanwhile prepare the dressing. Take 2 tablespoons of lemon juice, 5 tablespoons of olive oil and a pinch of salt and pepper. Mix these ingredients in a small bowl. Now drain the vegetables, put them into a bowl and dress with the olive oil and lemon juice dressing you have prepared. Finally, take the fennel tops, chop them and sprinkle on top of the salad. This salad goes great with anything grilled, so it’s perfect for the summer season!
